Here are my latest adventures!

“Margaritaville” – Lime cupcake with margarita buttercream.  I opted to go non-alcoholic since I took these to work for a co-worker’s birthday…I figured it might look a little odd if the HR staff is bringing in booze-y cupcakes 🙂  But gosh, it sure did taste like a margarita!!

“Chocolate Chip Cookie Explosion” – These are delightful little things.  Brown sugar cake with a cookie dough ball in the center, topped with brown sugar frosting.  The trick to these is freezing the cookie dough balls before dropping them into the cupcakes.  It prevents them from cooking too much, so you get the consistency of raw cookie dough in the middle (and it’s eggless, so there’s no risk of food poisoning!).  Yum 🙂
